Socca or a chickpea flour pancake from Nice is healthy, delicious and very easy and fast to prepare. You can enjoy sharing it with your friends and family and have good fun while chatting with them all along. In traditional socca bars it is served without any toppings but you can also add some tasty ingredients like cured ham or olives on the top. Good appetite!

| 300 grams of chickpea flour |
| 700 ml of lukewarm water |
| 1 teaspoon of olive oil |
| 1 pinch of salt |
Put about 300 g of chickpear flour in a large bowl.
Pour to the bowl about 700 ml of water.
Add olive oil and a bit of salt and mix everything using a blender or mixer.
Heat up your oven up to the temperature of 220 degrees Celsius.
On a round baking tray pour a bit of olive oil, put to the tray to the oven and heat it up for about 3 minutes.
After 3 minutes take the tray out of the oven, pour the socca dough there, put the tray back into the oven and take the ready-to-eat socca after 20 minutes.
Serve the socca with salt and pepper only or with the toppings of your choice: cured ham, mozzarella, olives or pink pepper.
